Muffin for Saint Lucia

This recipe is one that I usually use to prepare the muffins, nothing special in the ingredients. And it's not even the original recipe, I like them so, they are good, soft and low in fat. Of special is instead a ' initiative launched by Caris, to highlight the fact that the department of neuro-physiology Fondazione Santa Lucia di Roma probably will be closed for lack of funds.
So Caris has mobilized the world of blogs to create a buzz. I wonder that so many people all together can not change your mind to people who have the power to decide whether or not to close a department like that.
Meanwhile Caris wants to collect as many recipes bright and colorful and give the department mentioned above. And here they are the cakes that I prepare quite often, sometimes with chocolate chips, sometimes with raisins or coconut flour, in short, by adding what you like best.
Main Ingredients:
300 gr flour 200 gr sugar
80 g corn oil
1 small jar of vanilla yogurt
1 / 2 packet of baking powder, (8 grams)
2 eggs the juice of two oranges (or another cup of yogurt)
blend the ingredients until you get a composed of relatively soft, the consistency of a thick yogurt. I'll add more or less orange juice to create the right consistency of the compound. Alternatively, you can put two pots of yogurt instead of one. Also because of oranges in a little while he will find it. Most of the time I will prepare simple, does not bring those. But this is a special occasion and it takes a little bit of color! We divide the mixture into glasses or bowls and is colored with a few drops of food coloring. Blue, red, green, yellow ... Maybe even the cocoa :-)
A Now you can add chocolate chips, raisins, hazelnuts ... you put paper cups in the pan with the appropriate holes and fill with the dough to about an inch from the edge of paper. I put the muffin colored dough in layers of three different colors and I covered with granulated sugar.
The muffins are baked in the oven at 180 degrees for about 20 minutes, I always use a toothpick to make sure they are cooked to perfection. Should not be cooked too much, otherwise they lose their softness. Unfortunately you have to wait for it to cool to taste, and maybe cut them in half and stuff them with chocolate cream !
